Holiday Carrot Cake Oat Magic
Trading in Holiday parties for self care this Holiday season. A big part of self care for me is properly fueling my body. Luckily, one of my favourite self care activities involves taking time to try new recipes. This December, I put together a little Holiday Carrot Cake Oat Magic using @genuinehealth’s fermented vegan proteins+ for a little extra protein boost.
What ways do you incorporate self care into your Holiday season?

Cook Time – 12 minutes
Servings – 2-4
Recipe
For the oatmeal:
- 1 cup grated carrot
- 3 cups unsweetened almond milk, plus more as needed*
- 1.5 tbp pure maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- Dash ground nutmeg, to taste
- Pinch fine sea salt
- 1 cup Bob’s Steel Cut Oats
- Genuine Health Fermented vegan proteins+ in vanilla
Topping suggestions:
- Chopped toasted walnuts
- Sliced almonds
- Shredded coconut
Directions:

- Peel and finely grate the carrots on a box grater.
- In a medium-sized pot over medium heat, whisk together the almond milk, maple syrup, cinnamon, ginger, nutmeg, and a pinch of salt until smooth.
- Stir in all of the grated carrots and oats. Bring to a low boil and then reduce the heat to medium to simmer. Cook, uncovered, for about 8 to 11 minutes, stirring frequently until thickened. Add more milk if too thick.
- Remove from heat, stir in protein powder and Portion into bowl(s).
- Garnish the oatmeal with your desired toppings and enjoy immediately. Leftovers can be stored in an airtight container in the fridge for a couple days. They are delicious cold, too!
