Miso Salmon

Prep Time – 8 minutes
Cook Time – 10 minutes
Servings – 2-4
    • 1/8 cup Miso Paste
    • 1/8 cup Mirin
    • 2 Tbsp Soy Sauce or Tamari
    • 2 Tbsp Rice Wine Vinegar
    • 1 tsp Sesame Oil
    • 1 Thumb of grated Fresh Ginger
    • 3 Green Onions (chopped)
    • Black Sesame Seeds (Optional)
  1. In a small bowl or mason jar combine the miso paste, mirin, tamari, rice wine vinegar, sesame oil and ginger and whisk well together. Take your salmon fillets on a shallow dish and pour half of the mixture over top of the salmon to soak for 5 minutes.
  2. Meanwhile, place a cast iron pan over a medium high heat and season with a high temperature oil such as coconut or avocado oil. Once nice and hot, place the salmon skin side up and sear the pink part of the salmon to seal in the juices. Cook for 3-4 minutes and flip to the other side. start spooning more of the mixture on top of the salmon while the other side cooks. I personally like my salmon cooked medium rare but you can keep on longer if you want to cook it through.
  3. Place the salmon on a board to allow to rest for a couple of minutes. Chop green onion and sprinkle on top along with some black sesame seeds. Serve on a bed of rice and assorted vegetables.

Classic Dijon Lemon Dill Salmon

Prep Time – 5 minutes
Cook Time – 20 minutes
Servings – 2-4
  • 1-2 Tbsp Dijon Mustard (I like to combine a mixture of grainy and smooth)
  • Lemon Slices
  • Handful of Fresh Dill
  • Ground Pepper
  1. Preheat the oven to 375F and line a casserole dish with parchment paper.
  2. Take your dijon and spread across the salmon. Place fresh slices of lemon and a generous amount of fresh dill and crack pepper on top. Easy as that! Place in the oven for 18-20 minutes or until salmon is cooked through. Best served with a big green salad.

Pistachio Crusted Pesto Salmon

Prep Time – 5 minutes
Cook Time – 20 minutes
Servings – 2-4
  • 2 Tbsp Pesto
  • 1/4 cup pistachios (shells removed and roughly chopped)
  1. Preheat oven to 375F and line a casserole dish with parchment paper.
  2. Chop your pistachios into rough pieces. Spread your pesto over the salmon and press in the pistachios. Another super simple but very delicious recipe. Place in the oven for 18-20 minutes. Serve with quinoa and grilled asparagus.
