Me and the All Day Fit crew made these energy bites for “Plastic Free July”. Not only do store bought energy balls and bars come in wasteful plastic but you also are not in control of the quality and quantity of ingredients that go into them. Try making your own energy bites for snacks this week, they are packed with lots of healthy fats to keep you fuller for longer.

Prep Time – 8 minutes

Cool Time – 90 minutes

Servings – 12-14 bites

Ingredients

  • 10-12 pitted dates
  • 3 tbsp pumpkin seeds
  • 1/4 cup walnuts
  • 1/2 cup rolled oats
  • 1/2 cup organic apricots
  • 2 tbsp nut butter of your choice
  • 1-2 tbsp of water (as needed)

Instructions

  1. Place all the ingredients in a blender and blend until they are in small pieces. Slowly add the water a tablespoon at a time until you get desired texture. The batter should be able to form into balls without sticking to your fingers too much.
  2. Roll into 1 inch balls and place on a baking sheet and place in the fridge for atleast 90 minutes. Store in fridge in an airtight container for up to 10 days.
