    4 Over Ripe Bananas
    4 Large Eggs (room temperature)
    ¼ cup Coconut Oil (melted)
    1 ¾ cup Almond Flour
    ¼ cup Coconut Flour
    1 tsp Baking Soda
    1 tsp Baking Powder
    1 tsp Cinnamon
    1 tsp Pure Vanilla Extract
    ¼ tsp Sea Salt
1 cup of Pecans and/or Walnuts (if desired)

[/vc_column_text][/vc_column_inner][vc_column_inner column_padding=”no-extra-padding” column_padding_position=”all” background_color_opacity=”1″ background_hover_color_opacity=”1″ column_shadow=”none” column_border_radius=”none” width=”2/3″ column_border_width=”none” column_border_style=”solid”][nectar_animated_title heading_tag=”h6″ style=”color-strip-reveal” color=”Accent-Color” text=”Instructions”][vc_column_text]

  1. Preheat the oven to 350F degrees. Line the bottom of a loaf pan with parchment and additionally grease with coconut oil. Make sure to get the edges.
  2. In a large bowl, mash bananas until there are no large chunks. Add in the eggs, vanilla, cooled coconut oil and whisk until combined.
     –
  3. Add in the flour, baking powder, baking soda, cinnamon and sea salt and mix until you get a thick mixture. I used a cup of chopped nuts to add inside for extra crunch.
  4. Using a spatula, scrape the mixture into your loaf pan and set on the middle rack to bake for 50-60 mins. Once done, stick a toothpick in the centre and it should come out clean.
  5. Allow to cool on a wire rack and serve with butter or on its own.
