I beet you can’t have just one bite!

Prep Time – 20 minutes

Cook Time – 40 minutes

Servings – 8-10

Ingredients

2 roasted beets (or 3-4 if small)
1 can chickpeas, soaked and rinsed
Zest and juice of lemon
2 Tbsp tahini paste
2 cloves garlic
Sea salt to taste
Bunch of parsley, roughly chopped

Instructions

  1. Place beets in the oven at 400F for 40 minutes until tender and place aside to cool.
  2. In a food processor, add in the beets, chickpeas, lemon, tahini, garlic, salt and parsley and blend on medium speed until combined. Add in more tahini if you prefer a more creamy texture.

  3. Serve in a bowl with veggie sticks or crackers. Place in an airtight container in the fridge
    to store.
