Do you feel connected to your food?

No matter what your cultural background is, preparing and eating food is something we all have in common. If you think about life’s different occasions, food is most likely at the center of each one. Food is more than nourishment – it is a method to communicate sentiments, express creativity and create memories!

“Cooking changes your relationship to food. Instead of consuming something, now you’re making it. Meals become achievements, expressions, discovery, and relationships.” – Michael Pollan

Barbara’s Tomato Zucchini Casserole

This recipe doesn’t have specific measurements of ingredients, I make them up or change them around based on what I have or what I feel like. This recipe was built from my Dad describing his favourite childhood dish to my Mom, who then played around with the recipe until my Dad said it tasted “just like my mothers.”

My grandmother on my Dad’s side, Barbara Jones, died before my parents even met. While I am named after her, there is little I know about her other than she was a great athlete and could cook a mean meal in the kitchen….sounds like we would have gotten along well!
