Fall is officially here and the only thing that gets me through the cold days is the thought fall flavours! This granola is wholesome, refined sugar free, gluten free, paleo and super easy to make.

Prep Time – 10 minutes

Cook Time – 1 hour 10 minutes

Servings – 2 cups

Ingredients

2 apples diced
½ cup rolled gluten-free oats
½ cup raw sunflower and pumpkin seeds
½ cup pecans
½ cup walnuts
½ cup raw honey (can substitute maple syrup to make vegan)
3 Tbsp coconut oil (melted)
1 Tbsp flax seeds (grounded)
1 tsp vanilla
2 tsp cinnamon
1 tsp nutmeg
¼ tsp ginger
¼ tsp salt

Instructions

  1. Preheat oven to 225F and line a baking sheet with parchment paper.
  2. Dice the apples in small cubes and place on the baking sheet evenly. Bake for 30-35 minutes.

  3. Place the nuts and half of the seeds in a food processor and blend until roughly chopped. Place in a bowl with remaining seeds and add in the oats, ground flax, cinnamon, nutmeg, ginger and salt. Stir until combined.
  4. Add in the honey and coconut oil until you have a sticky mixture. Once the apples have baked and cooled, add the granola mixture to the baking sheet and press down with your fingers.
  5. Increase the temperature of the oven to 275F and bake for 40 minutes. Your home will start to fill with the scent of cinnamon and apples!
  6. Remove from the oven and allow to cool completely until it hardens. Store in an airtight container to hold in its freshness.
