We all have that bag of frozen bananas in the freezer that never gets used. Well I’m giving you the perfect opportunity to use a bunch of them by making this banana loaf that is only sweetened with BANANAS! You heard it right. This loaf is filled with healthy ingredients and super easy to whip up!

Prep Time – 12 minutes

Cook Time – 50-60 minutes

Servings – 1 Loaf

Ingredients

    4 Over Ripe Bananas
    4 Large Eggs (room temperature)
    ¼ cup Coconut Oil (melted)
    1 ¾ cup Almond Flour
    ¼ cup Coconut Flour
    1 tsp Baking Soda
    1 tsp Baking Powder
    1 tsp Cinnamon
    1 tsp Pure Vanilla Extract
    ¼ tsp Sea Salt
    1 cup of Pecans and/or Walnuts (if desired)

Instructions

  1. Preheat the oven to 350F degrees. Line the bottom of a loaf pan with parchment and additionally grease with coconut oil. Make sure to get the edges.
  2. In a large bowl, mash bananas until there are no large chunks. Add in the eggs, vanilla, cooled coconut oil and whisk until combined.

  3. Add in the flour, baking powder, baking soda, cinnamon and sea salt and mix until you get a thick mixture. I used a cup of chopped nuts to add inside for extra crunch.
  4. Using a spatula, scrape the mixture into your loaf pan and set on the middle rack to bake for 50-60 mins. Once done, stick a toothpick in the centre and it should come out clean.
  5. Allow to cool on a wire rack and serve with butter or on its own.
