Holiday Carrot Cake Oat Magic 

Trading in Holiday parties for self care this Holiday season. A big part of self care for me is properly fueling my body. Luckily, one of my favourite self care activities involves taking time to try new recipes. This December, I put together a little Holiday Carrot Cake Oat Magic using @genuinehealth’s fermented vegan proteins+ for a little extra protein boost.

What ways do you incorporate self care into your Holiday season?

Prep Time – 8 minutes

Cook Time – 12 minutes

Servings – 2-4

Recipe 

For the oatmeal:

  • 1 cup grated carrot
  • 3 cups unsweetened almond milk, plus more as needed*
  • 1.5 tbp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Dash ground nutmeg, to taste
  • Pinch fine sea salt
  • 1 cup Bob’s Steel Cut Oats
  • Genuine Health Fermented vegan proteins+ in vanilla

Topping suggestions:

  • Chopped toasted walnuts
  • Sliced almonds
  • Shredded coconut

Directions:

    1. Peel and finely grate the carrots on a box grater.
    2. In a medium-sized pot over medium heat, whisk together the almond milk, maple syrup, cinnamon, ginger, nutmeg, and a pinch of salt until smooth.
    3. Stir in all of the grated carrots and oats. Bring to a low boil and then reduce the heat to medium to simmer. Cook, uncovered, for about 8 to 11 minutes, stirring frequently until thickened. Add more milk if too thick.
    4. Remove from heat, stir in protein powder and Portion into bowl(s).
    5. Garnish the oatmeal with your desired toppings and enjoy immediately. Leftovers can be stored in an airtight container in the fridge for a couple days. They are delicious cold, too!
